The requirement to effectively filter kitchen exhaust discharge to a non-objectionable effluent is increasing due to health concerns and odour complaints. Research out of the New York has shown that in the past emissions from barbeque grills have been the sole attributor to 400 deaths annually, and these commercial kitchens in 2011 contributed more PM2.5 pollution than motor vehicles.
Filtering kitchen exhaust may no longer be solely an aesthetic or comfort issue.
Based on the technical paper recently published in AIRAH’s Ecolibrium April 2018 issue “Kitchen Exhaust Design Part 1”, critical design parameters are proposed using first principle analysis. Kitchen exhaust filtration design will be covered, with discussion on current Australian Standards compared with current benchmark practices worldwide.
This presentation is ideal for mechanical consultants, architects, and specifiers, as well as project, design or facility managers and owners of facilities with commercial kitchen exhaust systems.

We showcased the working mechanism of the Strobic Air Tri-Stack high performance, mixed flow dilution fan which disperses fumes and eliminates odours.
